The bit of extra time it takes to make this superfood Acai bowl is well worth it! Looking and tasting a little like ice cream, this thick, velvety smoothie in a bowl is an incredible way to start your day—or to eat after a workout.
The Brazilian Acai is high in antioxidants, loaded with healthy fats, and it’s also low in sugar, making this combination of nutrients a fantastic choice to give you loads of sustained energy and balanced blood sugar.
Adding protein and avocado to this in order to get the fat, fiber, protein combo is important for keeping blood sugar stabilized. Without the protein and fat, you’ve got yourself a lot of fruit sugar, which will raise your insulin levels pretty quickly and give you that crash we all want to avoid.
Have one big bowl or divide into two for a little pick-me-up snack in the afternoon.
INGREDIENTS
1 Acai frozen smoothie packet (I use Sambazon) 6 ounces coconut milk, almond or cashew milk (really, any alternative milk is fine!) ½ cup frozen raspberries ½ large banana, sliced and frozen 1 tablespoon cacao powder 2 tablespoons plant-based protein powder (you can use chocolate flavor for additional chocolate-y taste.)
Optional: one serving of collagen Optional: a few slices of avocado (extra creamy and filling)
Topping: any combination of blueberries, raspberries, banana slices, cacao nibs, coconut, hemp seeds, goji berries
METHOD
Place your alternative milk, protein powder (and collagen if using), and cocao in the blender and mix well. Next, add remaining ingredients and blend until thick and creamy. You may need to add a small amount milk to puree all ingredients into a smooth mixture. You’ll want the mixture to be thicker than a smoothie and have more of a soft serve ice cream consistency.
Place in a bowl (or two bowls) and use any combination of toppings.
Enjoy immediately!
